Ingredients
- 12 ounces any small shell pasta
- 15 ounces Eden Garbanzo Beans, rinsed, drained
- 15 ounces Eden Kidney (dark red) Beans, rinsed, drained
- 15 ounces Eden Great Northern Beans, rinsed, drained
- 1 1/2 cups celery with leaves, thinly sliced
- 3 cups organic tomatoes, diced
- 1 cup fresh parsley, chopped
- 2 - 12 ounce jars water packed artichokes, drained, quartered
- 1/4 cup Eden Extra Virgin Olive Oil
- 1/4 cup freshly squeezed lemon juice
- 2 Tbsp Eden Brown Mustard
- 1 1/2 tsp Eden Sea Salt
- 1/2 tsp Eden Black Pepper, or to taste
- 1 1/2 Tbsp Eden Dried Basil
Directions
Cook pasta according to package directions. Combine remaining salad ingredients in a mixing bowl. When pasta is done, rinse, drain and add to the mixing bowl. Combine all dressing ingredients in a measuring cup and mix thoroughly. Pour dressing over the salad and gently toss to mix. Let stand for 1/2 hour before serving to allow the flavors to blend.
