Vegetable Shell Pasta & Three Bean Salad

Serves 10 | Prep Time 35 minutes | Cook Time 10 minutes



12 ounces Eden Small Vegetable Shells

15 ounces Eden Garbanzo Beans, rinsed, drained

15 ounces Eden Kidney (dark red) Beans, rinsed, drained

15 ounces Eden Great Northern Beans, rinsed, drained

1 1/2 cups celery with leaves, thinly sliced

3 cups organic tomatoes, diced

1 cup fresh parsley, chopped

2 - 12 ounce jars water packed artichokes, drained, quartered


1/4 cup Eden Extra Virgin Olive Oil

1/4 cup freshly squeezed lemon juice

2 Tbsp Eden Brown Mustard

1 1/2 tsp Eden Sea Salt

1/2 tsp Eden Black Pepper, or to taste

1 1/2 Tbsp Eden Dried Basil


Cook pasta according to package directions. Combine remaining salad ingredients in a mixing bowl. When pasta is done, rinse, drain and add to the mixing bowl. Combine all dressing ingredients in a measuring cup and mix thoroughly. Pour dressing over the salad and gently toss to mix. Let stand for 1/2 hour before serving to allow the flavors to blend.
