Ingredients
- 2 Tbsp Eden Extra Virgin Olive Oil
- 1 clove garlic, minced
- 1 cup onions, diced
- 1/2 cup red bell pepper, diced
- 1/2 cup green bell pepper, diced
- 1/2 cup organic sweet corn, fresh or frozen
- 30 ounces Eden Chili Beans (seasoned dark red kidney), 2 cans
- 15 ounces Eden Pinto Beans, 1 can
- 28 ounces organic stewed tomatoes, do not drain
- 15 ounces Eden Rice & Kidney Beans
- 1/2 tsp Eden Sea Salt, or to taste
Directions
Heat oil in a medium soup pot and sauté the garlic and onions for 2 to 3 minutes. Add all remaining ingredients. Mix thoroughly, cover and bring to a boil. Reduce the flame to medium-low and simmer for 15 minutes. Serve.
