Ingredients
- 2 Tbsp Eden Extra Virgin Olive Oil
- 3 cloves garlic, pressed
- 5 Tbsp organic unbleached white flour
- 1 1/2 cup water
- 2 cups Unsweetened Edensoy
- 3/4 tsp Eden Sea Salt, or to taste
- 2 cup baby carrots, sliced in half lengthwise
- 1 cup fresh green beans, stems removed, sliced into 1" pieces
- 1/2 cup organic sweet corn, fresh or frozen
- 1/2 cup green peas, fresh or frozen
- 2 tsp fresh basil, minced
- 1 pinch Eden Black Pepper, or to taste
- 2 Tbsp fresh parsley, chopped fine
- 12 ounces Eden Kamut Vegetable Spirals, 1 package
Directions
Heat oil in a medium skillet and sauté the garlic for several seconds. Add the flour and stir until coated with oil. Combine the water and Edensoy. Slowly add the water/Edensoy mixture, while constantly stirring with a whisk. Whisk frequently until the sauce thickens. Add the sea salt and carrots, and simmer 5 to 7 minutes.
While the carrots are cooking, cook the pasta as package directs. When the pasta half done add the beans, corn, peas, basil and pepper. Simmer about 3 to 5 minutes. When the pasta is done drain and set aside. Remove the sauce from the flame, mix in parsley and serve the sauce ladled over the pasta.
