Kamut Vegetable Spirals in White Sauce

Serves 6 | Prep Time 20 minutes | Cook Time 25 minutes

Ingredients

• 2 Tbsp Eden Extra Virgin Olive Oil

• 3 cloves garlic, pressed

• 5 Tbsp organic unbleached white flour

• 1 1/2 cup water

• 2 cups Unsweetened Edensoy

• 3/4 tsp Eden Sea Salt, or to taste

• 2 cup baby carrots, sliced in half lengthwise

• 1 cup fresh green beans, stems removed, sliced into 1" pieces

• 1/2 cup organic sweet corn, fresh or frozen

• 1/2 cup green peas, fresh or frozen

• 2 tsp fresh basil, minced

• 1 pinch Eden Black Pepper, or to taste

• 2 Tbsp fresh parsley, chopped fine

• 12 ounces Eden Kamut Vegetable Spirals, 1 package

Directions

Heat oil in a medium skillet and sauté the garlic for several seconds. Add the flour and stir until coated with oil. Combine the water and Edensoy. Slowly add the water/Edensoy mixture, while constantly stirring with a whisk. Whisk frequently until the sauce thickens. Add the sea salt and carrots, and simmer 5 to 7 minutes.

While the carrots are cooking, cook the pasta as package directs. When the pasta half done add the beans, corn, peas, basil and pepper. Simmer about 3 to 5 minutes. When the pasta is done drain and set aside. Remove the sauce from the flame, mix in parsley and serve the sauce ladled over the pasta.
