Ingredients
- 6 Tbsp Eden Red Wine Vinegar, Apple Cider Vinegar, or Brown Rice Vinegar
- 2 Tbsp Eden Brown Mustard
- 5 Tbsp Eden Extra Virgin Olive Oil
- 1/2 tsp Eden Sea Salt
- 1/8 tsp Eden Black Pepper, or to taste
- 1 Tbsp Eden Barley Malt Syrup
- 2 tsp organic maple syrup
- 10 ounces mixed baby salad greens
or baby spinach - 1 cup red onion, thinly sliced into half-rounds
- 1/2 cup Eden Dried Montmorency Cherries
- 4 ounces Eden Roasted Pumpkin Seeds, or Spicy Pumpkin Seeds
Directions
To make the dressing, combine the vinegar, mustard, olive oil, sea salt, pepper, barley malt and maple syrup in a small bowl or a measuring cup. Mix the dressing with a whisk or fork. Place the spinach or baby salad greens in a salad bowl. Toss in the cherries, red onion and pumpkin seeds. Serve with the dressing on the side.
