Ingredients
- 30 ounces Eden Caribbean Black Beans, 2 cans, do not drain
- 1/4 cup carrots, diced
- 1/4 cup onion, diced
- 1/2 cup organic sweet corn, fresh or frozen
- 1 small red bell pepper, diced
- 2 Tbsp fresh parsley, minced
- 1/4 tsp Eden Sea Salt, or to taste
- 1 Tbsp Eden Extra Virgin Olive Oil
- 1 clove garlic, minced
Directions
Heat oil in a medium soup pot and sauté the garlic for 1 minute. Add all remaining ingredients except the parsley. Cover and bring to a boil. Reduce the flame to low and simmer for 10 minutes until the vegetables are tender. Serve and garnish with parsley.
