- 2 cups leftover, cooked Eden Short Grain Brown Rice
- 6 thin slices Eden Pickled Daikon Radish, finely chopped
- 2 Tbsp red onion, minced
- 1 Tbsp celery, minced
- 1 Tbsp carrots, coarsely grated
- 2 tsp fresh parsley, minced
- 1 Tbsp Eden Brown Rice Vinegar
