
Ingredients
- 8 oz Eden Soba
or any Eden Soba - .88 oz Eden Whole Shiitake Mushrooms, 1 package
or 1/2 package Eden Sliced Shiitake Mushrooms - 2 cloves garlic, minced
- 1 cup onion, sliced
- 2 cups broccoli, chopped
- 1/2 cup red bell pepper, diced
- 1/2 tsp Eden Hot Pepper Sesame Oil
- 1 Tbsp Eden Toasted Sesame Oil
or Eden Black Sesame Oil - 1 Tbsp Eden Mirin, or to taste
- 1 Tbsp Eden Brown Rice Vinegar
- 1 cup snow peas, remove stems
- 1/2 cup green onions, finely chopped
- 1 1/2 tsp Eden Kuzu Root Starch, dissolved in 3 T. cold water
- 1 1/2 Tbsp Eden Shoyu Soy Sauce, or to taste
Directions
Cook pasta as package directs, rinse, drain and set aside. If using whole shiitake, remove shiitake stems after soaking, discard stems, and slice caps. Cook shiitake in soaking water for 15 minutes. Heat oil in a large skillet, sauté garlic and onions for 2 minutes. Add red pepper and sauté for 1 minute. Add shiitake, cooking liquid, mirin, and vinegar. Bring to a boil, reduce heat and simmer for 5 minutes. Add broccoli, and dissolved kuzu, stirring constantly. Cook until mixture thickens. Add snow peas, green onion and shoyu. Mix and simmer 2 minutes. Serve over pasta or mix pasta in with the sauce before serving.
