Ingredients
- 1 1/3 cups organic unbleached white flour
- 1 cup Eden Soft White Pastry Wheat Flour
- 1/4 cup organic maple sugar
- 1 Tbsp instant grain coffee powder
- 2 tsp non-aluminum baking powder
- 1/2 tsp Eden Sea Salt
- 1/2 tsp Eden Cinnamon
- 1/2 cup pitted dates, chopped
- 1/4 cup pecans, coarsely chopped
- 3/4 cup Original Edensoy, or Extra Original
- 1 Tbsp Eden Apple Cider Vinegar
- 2 Tbsp Eden Safflower Oil
- 2 Tbsp Eden Apple Sauce
or any Eden Apple Sauce
Directions
Preheat the oven to 425°. Line a baking sheet with parchment. In a large bowl, mix the first ten ingredients. In a measuring cup, mix the Edensoy, vinegar, oil and apple sauce. Stir the wet ingredients into the dry, just until moistened. Turn dough out onto a floured board. Dust hands with flour and pat dough into a disk about 3/4 inch thick. Cut into 8 wedges and transfer to the baking sheet. Bake until a cake tester comes out dry, about 15 minutes. Serve warm.
