Ingredients
- 2 cups water
- 1 cup green peas, fresh or frozen
- 1 pinch Eden Sea Salt
- 2 cups organic couscous
- 1 Tbsp Eden Ume Plum Vinegar, or to taste
- 1/2 cup pine nuts, lightly pan toasted
- 1/3 cup scallions, finely chopped
- 1/4 cup fresh mint leaves, finely chopped
- 1 cup red radishes, sliced thin and blanched 30 seconds in boiling water
or leave raw
- 15 ounces Eden Garbanzo Beans, drained
or cooked Eden Dry Garbanzo Beans
- 2 Tbsp Eden Extra Virgin Olive Oil
Directions
Place water, peas and sea salt in a sauce pan, cover and bring to a boil. Stir in couscous, cover and bring to a boil. Turn off flame, leave covered and allow to sit for 5 minutes. Place in a large mixing bowl and fluff to cool. Mix in all remaining ingredients and serve room temperature or chilled.
