If using the whole shiitake, place in a bowl and cover with warm water and soak 20 minutes. Remove from the soaking water and slice the tip of the stem off. Discard the stem and save the soaking water. Slice the cap thin. Place the sliced shiitake, and water, including the shiitake soaking water, in a medium saucepan. Cover and bring to a boil. Reduce the flame and simmer for 10 minutes. If using Eden Sliced Shiitake, do not soak. Simply add the shiitake and water to the saucepan and simmer as directed above.
The stock is now ready to season with Eden Shoyu Soy Sauce or any Eden Miso. Great served over any Eden Soba or Udon and garnish with Eden Sushi Nori.
