Couscous and Black Soybean Salad

Ingredients

  • 1 1/2 cups organic couscous
  • 1 1/2 cups water
  • 1 pinch Eden Sea Salt
  • 15 ounces Eden Black Soybeans, rinsed and well drained
  • 1/3 cup celery, finely diced
  • 1 1/2 cups fresh organic tomatoes, diced
  • 1/2 cup red bell pepper, diced
  • 1/4 cup green onions, finely chopped
  • 1/3 cup green olives, finely chopped
    or pitted black olives
  • 1/4 cup red onion, minced
  • 1/4 cup fresh parsley, minced
  • 2 Tbsp fresh dill, chopped
  • 2 cloves garlic, finely minced
  • 1/4 cup lemon juice, freshly squeezed

Directions

Bring water and sea salt to a boil in a sauce pan. Add couscous, cover and turn off the flame. Allow couscous to sit for 5 minutes. Remove and place in a large mixing bowl. Toss to fluff and cool the couscous. Mix in all remaining ingredients and serve room temperature or chilled.
