Ingredients
- 1 1/2 cups organic couscous
- 1 1/2 cups water
- 1 pinch Eden Sea Salt
- 15 ounces Eden Black Soybeans, rinsed and well drained
- 1/3 cup celery, finely diced
- 1 1/2 cups fresh organic tomatoes, diced
- 1/2 cup red bell pepper, diced
- 1/4 cup green onions, finely chopped
- 1/3 cup green olives, finely chopped
or pitted black olives - 1/4 cup red onion, minced
- 1/4 cup fresh parsley, minced
- 2 Tbsp fresh dill, chopped
- 2 cloves garlic, finely minced
- 1/4 cup lemon juice, freshly squeezed
Directions
Bring water and sea salt to a boil in a sauce pan. Add couscous, cover and turn off the flame. Allow couscous to sit for 5 minutes. Remove and place in a large mixing bowl. Toss to fluff and cool the couscous. Mix in all remaining ingredients and serve room temperature or chilled.
