Noodle Salad with Sesame Dressing

Ingredients

  • 1 cup Eden Arame
    or Eden Hiziki
  • 2 medium carrots, julienned
  • 8 oz any Eden Udon, 1 package
  • 1/4 cup green onions, thinly sliced
Dressing

Directions

Rinse arame. Simmer in water to just cover for 10 to 15 minutes. While the arame is cooking, lightly steam carrots for 1 to 2 minutes. Rinse with cold water to set color. Place in a bowl and set aside. Cook pasta as package directs, rinse and drain. When arame is done, mix with the pasta, carrots and green onions.

Blend all dressing ingredients in a blender or food processor, add to salad and mix well. Serve chilled or room temperature.

NOTE: If substituting Hiziki for Arame, soak Hiziki after rinsing, in 1/4 cup hot water for 10 minutes. Rinse, discard soaking water, and simmer per above directions.
