Ingredients
- 2 cups Vanilla Edensoy
- 1 cup Original Edensoy
- 1/2 cup organic yellow cornmeal
or finely ground organic yellow polenta - 1/4 cup Eden Barley Malt Syrup
- 1/4 cup organic maple syrup
- 1 cup apple, diced
- 1/4 cup Thompson Organic Seedless Raisins
- 1/8 tsp Eden Sea Salt
- 1/2 tsp Eden Ground Cinnamon
- 1/2 tsp ground ginger
- 1 Tbsp Eden Kuzu Root Starch, dissolved in 2 T. cold water
- 1 tsp Eden Safflower Oil, to oil baking dish
Directions
Preheat oven to 300°. Place half the Edensoy Vanilla, all the Edensoy Original, barley malt, maple syrup, ginger, cinnamon and sea salt in a saucepan. Bring to a boil. Reduce heat to medium-low. Slowly whisk in cornmeal or polenta, stirring constantly to prevent lumping, until thick. Simmer on low heat for 10 minutes. Turn off flame, mix in apples, raisins, and diluted kuzu. Oil a baking dish and pour the corn mixture in. Smooth evenly with a spoon. Pour remaining half of the Edensoy Vanilla over the mixture. Cover and bake for 1 1/2 hours. Serve hot.
