Ingredients
- 2 cups organic long grain white rice, washed and drained
- 4 cups water, including shiitake soaking water
- 2 Tbsp Eden Extra Virgin Olive Oil
- 3 cloves garlic, minced
- 1 cup diced onion
- 15 ounces Eden Pinto Beans, drained
- 1/2 cup Eden Sliced Shiitake Mushrooms, soaked 10 minutes in 1 cup warm water, coarsely chopped
- 1 1/2 cups organic diced tomatoes, do not drain
- 1/2 cup organic sweet corn, fresh or frozen, blanched 2 minutes
- 1 cup pitted Kalamata black olives, chopped
- 1 cup Eden Crushed Tomatoes
- 1 pinch Eden Sea Salt
Directions
Heat oil in a heavy cooking pot. Sauté garlic and onions for 3 minutes. Add rice and sauté another 5 minutes. Add all remaining ingredients, cover and bring to a boil. Simmer over a medium-low flame for 45 to 50 minutes or until rice is tender. Remove from heat and let sit for 10 minutes cover. Remove cover and place in a serving bowl.
