• 2 cups organic long grain white rice, washed and drained
• 4 cups water, including shiitake soaking water
• 2 Tbsp Eden Extra Virgin Olive Oil
• 3 cloves garlic, minced
• 1 cup diced onion
• 15 oz Eden Pinto Beans, drained
• 1/2 cup Eden Sliced Shiitake Mushrooms, soaked 10 minutes in 1 cup warm water, coarsely chopped
• 1 1/2 cups organic diced tomatoes, do not drain
• 1/2 cup organic sweet corn, fresh or frozen, blanched 2 minutes
• 1 cup pitted Kalamata black olives, chopped
• 1 cup Eden Crushed Tomatoes
• 1 pinch Eden Sea Salt
Heat oil in a heavy pot and sauté garlic and onions for 3 minutes. Add rice and sauté another 5 minutes. Add all remaining ingredients, cover and bring to a boil. Simmer over a medium-low heat for 45 to 50 minutes, or until rice is tender. Remove from heat and let sit for 10 minutes covered. Place in a serving bowl.
