Preheat oven to 350° F. Line an 8-inch square baking pan with baking paper. Place the nuts, oats, salt, and cinnamon in a food processor and pulse several seconds until a nut meal forms. Add the maple syrup, olive oil, vanilla and orange zest Pulse several seconds until it forms a crumbly dough. Press the dough evenly down into the lined pan so that it's about 1/4 to 1/3 inch thick. Sprinkle the coconut and extra ground pistachios over the dough. Bake about 10 to 12 minutes until golden brown. Remove from oven and let cool. Lift the baking paper out of the pan, cool to room temperature and slice into 12 squares.
