Cook pasta as package directs, rinse, drain and set aside. Heat oil in a large skillet and sauté the onions and garlic for 5 minutes. Add all remaining ingredients, including shiitake soaking water. Cover and bring to a boil. Reduce flame and simmer 15 minutes. Remove cover and mix in the pasta, stirring until hot. Serve.
