Ingredients
- 1 cup Eden Oat Flakes, or any Whole Grain Flakes
- 1 cup Eden Soft White Pastry Wheat Flour
- 1/4 tsp Eden Sea Salt
- 1/4 cup Eden Extra Virgin Olive Oil
- 1 tsp pure vanilla extract
- 1 tsp orange zest (grated peel)
- 1/3 cup Eden Apple Juice
- 32 oz Cocoa Edensoy, or Carob
- 1/4 cup Eden Kuzu Root Starch, dissolved in 5 T. cold water
- 1 Tbsp organic maple syrup, or to taste, optional
Directions
Preheat oven to 350°. Dry roast oats for 4 to 5 minutes until they release a nutty aroma. Remove and place in a mixing bowl. Dry roast flour for 2 to 3 minutes. Combine all dry ingredients. Combine wet and dry ingredients to form a ball of dough. Roll out dough and place crust in an 8 inch pie plate. Crimp the edges and trim the crust. Poke several holes in the bottom of the crust with a fork to prevent buckling while baking. Bake crust for 15 to 20 minutes until slightly browned, being careful not to burn. Remove crust from oven. Prepare pudding filling.
Place soymilk and maple syrup in a medium saucepan. Fo not cover. Bring almost to a boil over medium-high heat. Turn heat to low. Slowly add dissolved kuzu, stirring constantly until thick, to prevent lumping. When thick, pour the pudding filling into the pre-baked pie shell. Smooth pudding evenly in the pie shell. Refrigerate until chilled before slicing.
