Ingredients
- 1 cup Eden Soft White Pastry Wheat Flour
- 1/2 cup organic oat bran
- 2 tsp non-aluminum baking powder
- 1 tsp Eden Ground Cinnamon
- 1/2 tsp ground ginger
- 1/4 tsp ground nutmeg
- 1/4 tsp Eden Sea Salt
- 1/4 cup Thompson Organic Seedless Raisins, optional
- 1 1/2 cups Vanilla Edensoy, or Extra Vanilla
- 2 Tbsp Eden Barley Malt Syrup
- 1 Tbsp Eden Safflower Oil
- 1/2 cup any Eden Apple Sauce, or Apple Butter
- 1 tsp Eden Apple Cider Vinegar
- Eden Safflower Oil, for frying pancakes
or Eden Extra Virgin Olive Oil
Directions
In a large bowl, mix first 8 ingredients. Combine barley malt, oil, vinegar and Edensoy in a small bowl. Let sit 2 minutes to thicken like buttermilk. Stir wet ingredients into dry to form a thick batter.
Heat an oiled griddle. Pour 1/4 cup batter onto griddle for each pancake. Cook over medium heat until edges begin to look dry, about 1 to 2 minutes. Flip and brown on the other side. Serve with warm Eden Apple Sauce, Eden Apple Butter or pure maple syrup.
