Ingredients
- 1 pound organic extra firm tofu, drained
- 1/2 cup water
- 1 1/2 tsp Eden Umeboshi Paste, or to taste
- 1/4 cup fresh parsley, chopped
- 2 tsp Eden Shoyu Soy Sauce
Directions
Place all ingredients into a blender or food processor. Puree until thick and creamy. Use in place of dairy ricotta for lasagna, stuffed manicotti, stuffed shells, or vegetable quiche. The tofu becomes firm just like ricotta, when cooked!
