Butter Bean Soup with Corn & Spinach

Ingredients

  • 15 ounces Eden Butter Beans, do not drain
  • 1 cup vegetable stock or water
  • 3 Tbsp Eden Bonito Flakes, crumbled, optional
  • 1/4 cup onion, diced
  • 1/4 cup carrots, diced
  • 1/4 cup organic sweet corn, fresh or frozen
  • 1/4 cup spinach, chopped
  • 1/4 tsp Eden Sea Salt
  • 1 /4 cup cabbage, chopped
  • 1 tsp Eden Shoyu Soy Sauce, or to taste, optional
  • 2 Tbsp scallions, finely chopped

Directions

Place all ingredients, except the shoyu and scallions, in a soup pot, cover and bring to a boil. Reduce the flame to medium-low, and simmer for 15 to 20 minutes. Reduce the flame to low, and add the shoyu. Simmer 3 to 4 more minutes. Serve, and garnish with scallions.
