Butter Bean Soup with Corn & Spinach

Serves 4 | Prep Time 10 minutes | Cook Time 25 minutes


15 ounces Eden Butter Beans, do not drain

1 cup vegetable stock or water

3 Tbsp Eden Bonito Flakes, crumbled, optional

1/4 cup onion, diced

1/4 cup carrots, diced

1/4 cup organic sweet corn, fresh or frozen

1/4 cup spinach, chopped

1/4 tsp Eden Sea Salt

1 /4 cup cabbage, chopped

1 tsp Eden Shoyu Soy Sauce, or to taste, optional

2 Tbsp scallions, finely chopped


Place all ingredients, except the shoyu and scallions, in a soup pot, cover and bring to a boil. Reduce the flame to medium-low, and simmer for 15 to 20 minutes. Reduce the flame to low, and add the shoyu. Simmer 3 to 4 more minutes. Serve, and garnish with scallions.
