Ingredients
- 2 cups water, including reserved shiitake soaking water
- 1 cup Eden Sliced Shiitake Mushrooms, soaked 10 minutes in 1 cup warm water
- 1/4 cup onion, diced
- 1 clove garlic, minced
- 1 Tbsp Eden Kuzu Root Starch, dissolved in 2 T. cold water
- 1 tsp Eden Toasted Sesame Oil
- 2 1/2 tsp Eden Shoyu Soy Sauce
- 2 Tbsp fresh chives, scallions, or parsley, finely chopped
Directions
Heat up the oil in a skillet and sauté the garlic and onions for 2 to 3 minutes. Add the shiitake slices and sauté another 2 to 3 minutes. Pour the water, shiitake soaking water into the skillet . Cover and bring to a boil. Reduce the flame and simmer for 10 to 12 minutes. Slowly pour in the dissolved kuzu, stirring constantly until the mixture thickens. Season with shoyu and simmer for 4 to 5 minutes longer. Turn off the flame and mix in the chives. Serve over mashed potatoes, cooked organic grains or over any Eden pasta.
