Ingredients
- 2 tsp Eden Toasted Sesame Oil
- 2 cups Eden Maitake Mushrooms, 1 package, soaked 20 minutes in warm water to cover, coarsely chopped
- 1 cup Eden Sliced Shiitake Mushrooms, soaked 10 minutes in warm water to cover
- 1 pound organic extra firm tofu, rinsed, drained, cubed
- 4 cups spinach, chopped, and blanched 2 minutes
- 1 Tbsp Eden Mirin
- 2 tsp Eden Shoyu Soy Sauce, or to taste
- 1 Tbsp lemon juice, freshly squeezed
- 1 cup fresh daikon radish, finely grated for garnish
Directions
Heat up the oil in a large skillet and sauté the mushrooms for 5 to 7 minutes. Add the tofu and sauté for 5 minutes. Add the mirin and shoyu. Sauté 1 minute. Add and spinach, mix and sauté 1 minute. Sprinkle the lemon juice over and top with grated daikon.
