Ingredients
- 6 medium organic potatoes, peeled and chopped
- 3 cups water, or vegetable broth
- 1 1/2 tsp Eden Sea Salt, or to taste
- 2 Tbsp Eden Extra Virgin Olive Oil
- 1 medium onion, minced
- 3 cups Original Edensoy, Extra Original, or Unsweetened
- 2 cups green beans, stems removed, cut into 1" pieces
- 1 tsp dried marjoram, or to taste
- 1/2 tsp Eden Black Pepper
Directions
Place the potatoes, salt and water in a soup pot. Cover and bring to a boil. Cook the potatoes for 10 minutes or until tender. Mash the potatoes with the cooking liquid in the pot. Heat the oil in a skillet and sauté the onion for 3 to 5 minutes. Add the onions, Edensoy, green beans, marjoram and black pepper to the mashed potatoes. Bring almost to a boil. Reduce the flame and cook another 10 minutes or until the beans are tender. Serve hot.
