Brown Rice and Lentils

Ingredients

  • 3 Tbsp Eden Extra Virgin Olive Oil
  • 1 clove garlic, minced
  • 1 small shallot, minced
  • 3 1/2 cup onions, sliced thin
  • 1 cup organic long grain brown rice, washed and drained
  • 1 1/2 cups water
  • 1 pinch Eden Sea Salt
  • 15 ounces Eden Lentils w/Onion & Bay Leaf, do not drain
    or cooked Eden Dry Green Lentils
  • 1/3 cup small diced carrots
  • 1/3 cup fresh or frozen sweet corn
  • 1/4 tsp freshly ground black pepper
  • 1/4 cup fresh parsley, minced

Directions

Heat oil in a medium, heavy saucepan. Sauté garlic, shallots and onions over a medium flame for about 10 to 15 minutes until translucent. Add the rice and sauté another 5 minutes. Add water, lentils, salt and pepper. Cover and simmer for 45 minutes to 1 hour. Mix in the parsley and place in a serving bowl.
