Ingredients
- 3 Tbsp Eden Extra Virgin Olive Oil
- 1 clove garlic, minced
- 1 small shallot, minced
- 3 1/2 cup onion, sliced thin
- 1 cup organic long grain brown rice, washed and drained
- 1 1/2 cups water
- 1 pinch Eden Sea Salt
- 15 ounces Eden Lentils w/Onion & Bay Leaf, do not drain
or cooked Eden Dry Green Lentils - 1/3 cup carrots, diced
- 1/3 cup fresh or frozen sweet corn
- 1/4 tsp Eden Black Pepper
- 1/4 cup fresh parsley, minced
Directions
Heat oil in a medium, heavy saucepan. Sauté garlic, shallots and onions over a medium flame for 10 to 15 minutes until translucent. Add rice and sauté 5 minutes. Add water, lentils, carrots, sweet corn, salt, and pepper. Cover and simmer for 45 minutes to 1 hour. Mix in parsley, place in bowl, and serve.
