Ingredients
- 12 ounces Eden Spelt & Buckwheat Gemelli, or Kamut & Quinoa Twisted Pair
- 2 cups broccoli, small florets
- 2 cups cauliflower, small florets
- 1 cup carrots, sliced thin
- 1/2 cup artichoke hearts, water packed, drained, sliced in quarters
- 2 cloves garlic, minced
- 3 Tbsp Eden Extra Virgin Olive Oil
- 1/3 cup water, or vegetable broth
- 1/2 tsp Eden Sea Salt
- 1/4 tsp Eden Black Pepper, or to taste
- 2 Tbsp fresh basil, finely chopped
- 1 small organic tomato, cubed
Directions
Cook pasta according to directions, drain and set aside. Heat oil in a large skillet and sauté garlic for 1 to 2 minutes. Add the broccoli, cauliflower, carrot, artichoke hearts and sea salt. Sauté for 2 to 3 minutes. Add water, cover and steam 2 minutes. Turn off flame, add pepper, pasta, basil and tomato. Toss thoroughly and serve.
