Serves 6 | Prep Time 10 minutes | Cook Time 20 minutes
• 12 ounces Eden Spelt & Buckwheat Gemelli, or Kamut & Quinoa Twisted Pair
• 2 cups broccoli, small florets
• 2 cups cauliflower, small florets
• 1 cup carrots, sliced thin
• 1/2 cup artichoke hearts, water packed, drained, sliced in quarters
• 2 cloves garlic, minced
• 3 Tbsp Eden Extra Virgin Olive Oil
• 1/3 cup water, or vegetable broth
• 1/2 tsp Eden Sea Salt
• 1/4 tsp Eden Black Pepper, or to taste
• 2 Tbsp fresh basil, finely chopped
• 1 small organic tomato, cubed
Cook pasta according to directions, drain and set aside. Heat oil in a large skillet and sauté garlic for 1 to 2 minutes. Add the broccoli, cauliflower, carrot, artichoke hearts and sea salt. Sauté for 2 to 3 minutes. Add water, cover and steam 2 minutes. Turn off flame, add pepper, pasta, basil and tomato. Toss thoroughly and serve.
