Gingered Green Beans with Almonds

Ingredients

  • .88 ounces Eden Sliced Shiitake Mushrooms, soaked 20 minutes in 1 cup hot water
  • 1 Tbsp Eden Toasted Sesame Oil
  • 1 clove garlic, minced
  • 1 1/2 pounds green string beans, stems removed, cut into 2 inch lengths
  • 1/4 cup slivered organic almonds, or chopped pecans
  • 1 1/2 cups water, including shiitake cooking water
  • 2 tsp Eden Shoyu Soy Sauce
  • 1 Tbsp fresh grated ginger root, squeeze the juice from the ginger using hands, discard pulp
  • 1 heaping Tbsp Eden Kuzu Root Starch, dissolved in 2 Tbsp. cold water
  • 1 Tbsp lemon juice, freshly squeezed

Directions

Boil the shiitake slices in their soaking water for about 10 minutes. Drain and reserve the water. Heat oil in a large skillet. Sauté garlic and shiitake for 2 minutes. Add the water and shiitake cooking water, beans and almonds. Cook 5 minutes until the beans are tender. Add shoyu and ginger juice. Slowly add the dissolved kuzu to the skillet, stirring constantly to prevent lumping. When the liquid has thickened (about 1 minute), squeeze lemon juice over and serve.
