Ingredients
- 2 cups Eden Kamut Spirals
or Eden Kamut Elbows, or Eden Spelt & Buckwheat Gemelli - 2 Tbsp Eden Extra Virgin Olive Oil
- 1 medium onion, diced
- 3 cloves garlic, chopped
- 1 Tbsp dried rosemary
- 1 Tbsp crushed bay leaf
or 2 whole dried bay leaves - 1 cup carrots, chopped
- 2 medium organic potatoes, chopped
- 6 cups vegetable broth
or water - 15 oz Eden Spaghetti Sauce
- 1 cup organic sweet corn, fresh or frozen
- 15 oz Eden Great Northern Beans, do not drain
- 2 Tbsp Eden Barley Malt Syrup, optional
- 2 tsp Eden Shoyu Soy Sauce, or to taste
Directions
Cook pasta as package directs, rinse, drain and set aside. Heat oil in a soup pot and sauté onions and garlic until onions are translucent. Add herbs and sauté briefly. Add carrots, potatoes and water. Cover and bring to a boil. Reduce heat to medium-low and simmer 30 minutes. Add spaghetti sauce, corn, beans, barley malt and shoyu. Cover and simmer 5 minutes. Add pasta, stir and serve.
Eden Cannellini (White Kidney) Beans, Organic Navy Beans or any Eden Bean can be substituted for Great Northern Beans.
