Preheat oven to 350°. Oil a muffin tin. In a large bowl, combine the first three ingredients. In a medium bowl, mix well the Edensoy, vinegar, oil, maple syrup, and vanilla. Stir liquid ingredients into the dry. Fold in bananas, walnuts and raisins. Fill muffin tins three-quarters full. Bake 30 to 35 minutes, until a toothpick comes out clean.
