Preheat oven to 375°. Lightly oil and flour two 8" cake pans. Separately mix dry ingredients. Combine oil, Edensoy and vinegar, let sit for 5 minutes, mix with dry. Add the syrup, vanilla and applesauce. Add nuts and raisins, if using, and mix well. Bake 20 to 25 minutes, until a toothpick comes out clean. When cool, top with fruit, chopped nuts or frosting.
