Ingredients
- 1 cup Eden Short Grain Brown Rice
- 2 cups water
- 1 pinch Eden Sea Salt
- 16 pieces wild dried morel mushrooms
- 2 tsp Eden Extra Virgin Olive Oil
- 2 cloves garlic, minced
- 1/4 cup minced shallots
- 1 tsp Eden Mirin
- 1/4 cup mushroom soaking water
- 1/4 tsp Eden Shoyu Soy Sauce
or 1 pinch Eden Sea Salt - 2 tsp minced fresh parsley, for garnish
Directions
Place rice, water, and salt in a small saucepan and bring to a boil. Cover, reduce heat to medium-low and simmer for 1 hour.
While the rice is cooking, heat the oil in a heavy skillet and sauté the garlic and shallots for 2 to 3 minutes. Leave morels whole or chop and add to the skillet with mirin, morel soaking water, and salt. Sauté 5 to 6 minutes until most of the liquid has evaporated.
When the rice is done, either serve with sautéed morels on top or mix the morels into the rice and serve. Garnish with fresh thyme or parsley.
