Olive Oil Lemon Cake with Strawberry Sauce

Directions

Preheat oven to 350°.

Place first 6 ingredients in a mixing bowl, mix and set aside. Place olive oil, Edensoy, lemon juice and vinegar in a small bowl, mix and let sit 2 to 3 minutes. Add maple syrup, apple sauce and vanilla to wet ingredients. Pour wet ingredients into dry ingredients and mix well. Lightly oil a 9" round cake pan. Pour the batter into the cake pan. Bake for 25 minutes. Remove and allow to cool before removing from cake pan.

While the cake is baking, prepare the strawberry sauce. Remove stems from strawberries and rinse. Place 2/3 of the strawberries in a blender with 2 to 3 Tbsp maple syrup and pulse several seconds until strawberries are crushed. Pour into a serving bowl. Slice the remaining strawberries, mix into the strawberry puree and set aside.

When the cake has cooled, slice and serve with strawberry sauce.

Note: Other toppings can be substituted for strawberry sauce: any Eden Apple Sauce, any Eden Fruit Butter, or your favorite topping or frosting.
