Date Walnut Fudge with Sauerkraut

Ingredients

  • 2 cups pitted medjool dates, coarsely chopped
  • 1 cup unsweetened shredded coconut
  • 1/2 cup almond butter
  • 1/2 cup organic unsweetened cocoa powder
  • 1/2 cup Eden Sauerkraut
  • 1 Tbsp pure vanilla extract
  • 1/2 tsp Eden Sea Salt
  • 1 Tbsp organic honey
  • 1/4 cup semisweet organic chocolate chips
  • 1 cup dry pan roasted walnuts or pecans, chopped

Directions

Place all ingredients in a food processor except the chocolate chips and walnuts. Pulse until thoroughly blended. mix in the chocolate chips and walnuts. Spread mixture in a 8 x 8-inch pan and refrigerate for 1 hour. Slice and serve.

Note: Prep time includes time for refrigeration to allow the brownies to harden.
