Ingredients
- 8 oz any Eden Soba, 1 package
- 2 Tbsp Eden Toasted Sesame Oil
- 1/2 tsp Eden Hot Pepper Sesame Oil
- 3 cloves garlic, minced
- 1/2 lb button mushrooms, stems removed, sliced in quarters
- 1/2 cup carrots, sliced thin
- 1/2 lb organic extra firm tofu, rinsed, drained, cubed
- 1/4 cup scallions, sliced thin
- 1 1/2 Tbsp Eden Shoyu Soy Sauce, or to taste
Directions
Cook pasta per package directions, rinse, drain and set aside. Heat oil in a large skillet and sauté the garlic for 1 minute. Add mushrooms and half the soy sauce. Sauté for 3 to 4 minutes. Add the carrots, tofu and pasta. Sprinkle on remaining shoyu, cover and reduce the heat to medium-low. Cook 5 minutes. Remove cover and mix the pasta and vegetables. Add more shoyu, if desired. Turn heat to medium. Add scallions. Sauté 1 to 2 minutes until the pasta is hot and the and scallions bright green.
