Wild Yam Soba & Veggie Stir Fry

Serves 4 | Prep Time 10 minutes | Cook Time 22 minutes


• 8.8 ounces Eden Wild Yam Soba, 1 package
or Eden Lotus Root Soba

• 2 Tbsp Eden Toasted Sesame Oil

• 1/2 tsp Eden Hot Pepper Sesame Oil

• 3 cloves garlic, minced

• 1/2 pound button mushrooms, stems removed, sliced in quarters

• 1/2 cup carrots, sliced thin

• 1/2 pound organic extra firm tofu, rinsed, drained, cubed

• 1/4 cup scallions, sliced thin

• 1 1/2 Tbsp Eden Shoyu Soy Sauce, or to taste


Cook pasta per package directions, rinse, drain and set aside. Heat the oil in a large skillet and sauté the garlic for 1 minute. Add the mushrooms and half the soy sauce. Sauté for 3 to 4 minutes. Add the carrots, tofu and pasta. Sprinkle on the remaining shoyu, cover and reduce the flame to medium-low. Cook for 5 minutes. Remove the cover and mix the pasta and vegetables. Add more shoyu, if desired. Turn the flame to medium. Add the scallions. Sauté 1 to 2 minutes until the pasta is hot and the and scallions bright green.
