Ingredients
- 4 cup baby salad greens
- 4 cups romaine lettuce, chopped
- 1/2 cup cucumber slices
- 1/2 cup sliced tomatoes
- 1/2 cup pitted Kalamata olives
- 1/3 cup tan sesame seeds, rinsed, drained and dry pan roasted
- 1 cup water
- 3 Tbsp minced parsley
- 3 Tbsp minced scallion
- 2 tsp Eden Ume Plum Paste
- 2 tsp Eden Brown Rice Vinegar
- 2 tsp finely grated fresh ginger root
- 1/2 tsp organic maple syrup
Directions
Place the sesame seed in a blender and pulse several seconds to grind. Using your hands, squeeze the juice from the ginger into a blender. Discard the ginger pulp. Place all remaining ingredients in the blender and pulse several seconds to mix. Place in a serving container.
Toss the salad greens and lettuce. Sprinkle the cucumber, tomato and olive over the salad. Serve with dressing on the side.
