Ingredients
- 14 ounces Eden Kamut or Spelt Spaghetti
- 2 Tbsp Eden Extra Virgin Olive Oil
- 2 tsp grated lemon peel (zest)
- 2 Tbsp lemon juice, freshly squeezed
- 1/4 cup fresh parsley or tarragon, chopped
- 1/4 cup fresh chives or scallions, chopped fine
- 1/2 tsp Eden Sea Salt, or to taste
- 1/8 tsp Eden Black Pepper, or to taste
- 1/2 cup reserved pasta cooking water
Directions
In a large pot of boiling water, cook pasta according to package directions. Drain pasta, reserving 1 cup pasta cooking water. Return pasta to pot. Stir in olive oil, lemon zest, lemon juice, and herbs. Season with salt and pepper. Add some of the reserved pasta cooking water to adjust consistency, if needed. Serve.
