Ingredients
- 3 ounces Eden Dried Cranberries
- 1/2 cup orange juice, freshly squeezed
- 2 cups Eden Soft White Pastry Wheat Whole Grain Organic Flour
- 1/2 cup organic yellow corn flour
- 2 tsp non-aluminum baking powder
- 1/4 tsp Eden Sea Salt
- 1/4 cup Eden Extra Virgin Olive Oil
- 1/3 cup Eden Barley Malt Syrup
- 2 tsp lemon peel, grated
- 2 cups Original Edensoy, or Extra Original
- 1/2 cup pecans, chopped
Directions
Preheat oven to 350°. Mix together all dry ingredients. Combine wet ingredients and blend in with the dry ingredients. Combine and fold in cranberries and pecans. Lightly oil a cake pan and pour in batter. Bake for 25 to 30 minutes.
