Ingredients
- 1 1/4 cups organic roasted soybean flour (kinako)
- 1/4 cup Eden Barley Malt Syrup
- 1/4 cup organic maple syrup
- 1/4 cup Vanilla Edensoy, or Extra Vanilla
- 3 Tbsp organic peanut butter, or almond butter
- 1/8 tsp Eden Sea Salt, or 1 tsp Genmai Miso
Directions
Place 1 cup roasted soy bean flour in a mixing bowl. Place the syrups, Edensoy, peanut butter and sea salt or miso in a small sauce pan. Bring almost to a boil, reduce the flame to low and simmer for 7 to 8 minutes until the syrup becomes thick and does not drip from a spoon. Stir frequently while the mixture is cooking. Pour the hot mixture over the soy bean flour and mix thoroughly. Form into a ball of dough. Sprinkle the remaining 1/4 cup of soy bean flour in the bottom of the mixing bowl. Roll the dough in it and knead for 2 to 3 minutes until stiff. Divide the dough into 4 equal size balls. Roll each ball into a long cylinder shape. Place on a plate and freeze for 5 minutes. Remove and slice into 1 inch rounds.
Roasted sesame seeds, or 2 tablespoons of roasted, chopped nuts or currants can be mixed into the dough for different flavors. The cylinders can be rolled in roasted sesame seeds as a coating on the outside.
Yields 30 to 35 pieces, 5 to 6 pieces per person
