Ginger Lime Sauteéd Lion's Mane

Place the water and lion's mane in a saucepan, cover and bring to boil. Reduce heat to medium-low and simmer for 10 minutes. Drain water from mushrooms and reserve for soup stock or discard.

Heat oil in a cast iron skillet. Sauté ginger and lion's mane for 2 to 3 minutes. Add the shoyu and mirin. Quickly mix to coat the mushrooms. Press down on the mushrooms with the flat side of a spatula for several seconds to get a good sear on them and to evaporate water from boiling the mushrooms. Flip over and sear the other side several seconds, while pushing down with the spatula. Squeeze the lime juice over and sauté 2 to 3 minutes. Place on a serving plate.
