
Ingredients
- 3 Tbsp Eden Black Sesame Oil
- 0.88 oz Eden Lion's Mane Mushrooms, soaked 20 min. in warm water, reserve water
- 1 medium organic onion, chopped
- 1 large organic carrot, slice in medium halfmoons
- 1 large clove garlic
- 2 Tbsp organic unbleached white flour
- 2 cups mushroom soaking water
- 2 Tbsp Eden Shoyu Soy Sauce, or to taste
- 1 1/2 Tbsp Eden Mirin
- 1 1/2 tsp Eden Cumin
- 1/2 tsp Eden Paprika
Directions
Heat oil in a heavy skillet. Squeeze soaking water from mushrooms and set water aside. Sauté mushrooms for 5 minutes, pressing down on them with a spatula to get a nice sear on them. Turn mushrooms over and press again to sear. Add the garlic and onions. Sauté for 2 to 3 minutes. Add flour and stir constantly until onions are coated. Slowly add mushroom water, stirring constantly to prevent lumps until it thickens. Add the remaining ingredients, stir, cover, reduce heat to medium-low and simmer 10 to 15 minutes until the mushrooms are tender. Adjust seasoning if needed.
Place in a serving dish and garnish with a sprig of parsley or ladle over cooked brown rice, millet or barley.
