Ingredients
- 2 cups apples, peeled and chopped into small 1/4" cubes
- 1 Tbsp organic coconut sugar, (no refined sugar)
or maple syrup - 1 tsp Eden Cinnamon
- 1/4 cup Eden Soft White Pastry Wheat Flour
- 1 cup organic unbleached flour
- 1/2 cup Eden Oat Flakes
- 1/2 cup organic coconut sugar
- 1/2 tsp Eden Sea Salt
- 2 tsp non-aluminum baking powder
- 1/2 tsp baking soda
- 1/3 cup Eden Safflower Oil
- 1/2 cup any Eden Apple Sauce
- 1/3 cup organic apple juice
Directions
Preheat oven to 375° F and oil the muffin tin or line cups with mini muffin liners. In a small saucepan, sauté the apples, coconut sugar and cinnamon for about 3 to 5 mintues over medium heat. The apples will begin to soften and caramelize slightly. Remove from the heat and set aside.
Combine the flour, oats, coconut sugar, salt, baking powder and baking soda in a medium mixing bowl. Stir to mix. Add the applesauce, oil and apple juice. Stir to mix. Fold in the apples. Fill the muffin cups to 3/4 full. Bake for about 12 to 18 minutes, or until a toothpick comes out clean. Baking time may vary slightly due to size of the muffin pan.
