Ingredients
- 16 cup popped, Eden Popcorn, (1/2 cup raw kernels yields 16 cups popped corn)
- 1/2 cup unsalted or salted peanuts, optional
- 1/2 cup Eden Barley Malt Syrup
- 1/2 cup organic maple syrup
Directions
Combine the barley malt and maple syrup in a small sauce pan. Bring almost to a boil over a high flame. Reduce to medium-low and simmer, stirring constantly, for 7 minutes. Pour the hot syrup over the popcorn and peanuts and mix thoroughly. Moisten your hands slightly with cold water and take a handful of the mixture and form into a ball while packing firmly with your hands. Repeat the above steps, making sure to moisten your hands before making each ball.
These whole grain popcorn balls make a healthier breakfast treat than pastries.
