Ingredients
- 2 cups any organic vegetable shell pasta
- 2 cups broccoli, florets
- 1 cup carrots, julienned
- 1 medium red bell pepper, diced
- 1 cup green onion, sliced thin
- 15 ounces Eden Navy Beans, drained
or cooked Eden Dry Navy Beans
- 4 cloves garlic, pressed
- 1/4 cup Eden Toasted Sesame Oil
or Eden Black Sesame Oil - 2 tsp Eden Umeboshi Paste, or to taste
- 1/4 cup water
Directions
Cook pasta as package directs, rinse, and drain. While cooking pasta, bring 3 cups water to boil. Separately, blanch carrots and broccoli, for 1 to 2 minutes each. Vegetables should be lightly cooked, crisp, and bright. Drain and rinse quickly under cold water to set the color. Mix pasta, beans, and vegetables. Prepare salad dressing by mixing ingredients in a blender. Add water to achieve desired consistency. Mix into salad. Serve cold or hot.
