Place water and maple syrup in a small saucepan and bring to a boil. Remove from heat. Add the chai tea bag and let steep for 10 minutes to concentrate the chai flavors. Remove bag and allow to cool.
Place half the pomegranate seeds and ice cubes in two tumbler glasses. Cut the apple wedges into chunks and add to each glass. Pour half of the chai, apple juice, and sparkling water over the ice. Add a cinnamon stick and serve.
