Ingredients
- 1 cup Eden Safflower Oil
- 3/4 cup organic maple syrup
- 1 1/2 cups Vanilla Edensoy
- 4 Tbsp flax seeds, ground in a coffee grinder
- 4 cups Eden Soft White Pastry Wheat Flour, sifted
or organic unbleached white flour - 2 tsp non-aluminum baking powder
- 2 tsp baking soda
- 1 tsp Eden Sea Salt
- 1 1/2 tsp Eden Ground Cinnamon
- 1/2 tsp ground allspice
- 3 cups coarsely grated raw carrots
- 1 cup walnuts, chopped
- 1/2 cup Thompson Organic Seedless Raisins
Directions
Preheat oven to 350°. Blend oil, maple syrup, flax seed, and Edensoy. Sift flour with baking powder and soda. Add remaining ingredients. Mix well, add wet ingredients to dry and stir well. Lightly oil and dust with flour, a 9" x 13" cake pan. Bake for 35 to 40 minutes.
